Vendakka Mezhukkupurattiyathu (Ladies Finger Stir Fry)
Vendakka/Okra – 250 grams
Green Chilies – 2-3 slit lengthwise
Small onions – 2-3 thinly sliced
Curry leaves – 1 sprig
Turmeric – 1 pinch
Pepper powder – 1/4 spoon
Mustard seeds – 1/4teaspoon
Vinegar – 1/4 teaspoon
Oil 1-2 tbsp
Salt to taste
Thinly slice the okra at an angle, as you see in the picture above. In a pan splutter mustard seeds, add small onions and saute till slightly golden brown.
Add the green chilies and curry leaves to the pan. Add a little salt to taste. Next add the turmeric powder to the pan and stir for half a minute. Add the Ladies finger to the pan, add salt to taste, also add 1/4 teaspoon vinegar (this is to avoid it from turning sticky after cooking), cover and cook for 2 minutes, open the pan and cook it for another 3 minutes (cook for a maximum of 5-8 minutes), stirring occasionally.
I like to keep the okra a little firm, over cooking makes it mushy. Before taking it off the flame sprinkle pepper powder and toss. Serve with rice.
